Carne Asada Tacos

Carne asada tacos, the perfect taco Tuesday champion!!

Ingredients:

  • 1- 1.5 lbs skirt steak (thin and longest you can find)
  • Chopped white onion or scallion
  • Sliced avocado
  • Fresh Squeezed lime juice
  • White cojita or Mexican queso/crumbling cheese
  • Fresh cilantro
  • Hot sauce of choice, I really like Secret Aardvark for tacos, found HERE
  • Street Taco Tortillas (Corn or flour)
  • 1/3 CUP OJ
  • 1/4 CUP SOY SAUCE
  • 1 SHOT TEQUILA
  • 1/3 CUP OLIVE OIL
  • JUICE OF 1 LIME
  • JUICE OF 1 LEMON
  • 2 TBS WHITE VINEGAR
  • 1 TBS CUMIN
  • 1 TSP CHILI POWDER
  • 1 CAN CHIPOTLE PEPPERS IN ADOBO SAUCE
  • 2 TBS MINCED GARLIC
  • 1 TBS SMOKED PAPRIKA
  • 1TBS OREGANO
  • 1TBS CILANTRO
  • 1TBS FRESH GROUND BLACK PEPPER
  • 1 TSP SEA SALT

Directions: Take out your steak, place some wax paper over the steak and then tenderize with a kitchen mallet on both sides. Then use a fork to pierce the meat all over. Salt both sides with sea salt and set aside. While we let that salt penetrate the meat, make the marinade as detailed below.

The Marinade:

Find a non reactive bowl, and mix together the ingredients listed below:

  • 1/3 CUP OJ
  • 1/4 CUP SOY SAUCE
  • 1 SHOT TEQUILA
  • 1/3 CUP OLIVE OIL
  • JUICE OF 1 LIME
  • JUICE OF 1 LEMON
  • 2 TBS WHITE VINEGAR
  • 1 TBS CUMIN
  • 1 TSP CHILI POWDER
  • 1 CAN CHIPOTLE PEPPERS IN ADOBO SAUCE
  • 2 TBS MINCED GARLIC
  • 1 TBS SMOKED PAPRIKA
  • 1TBS OREGANO
  • 1TBS CILANTRO
  • 1TBS FRESH GROUND BLACK PEPPER
  • 1 TSP SEA SALT

After you have finished creating the marinade, place the skirt steak in it and marinade in fridge for at least 4 hours. An hour before you are ready to cook, pull the marinating meat out and let it come up to room temp.

THE COOK:

Place meat on a hot grill, at least 450f and cook on both sides till it chars up a bit, and is cooked through. About 10 minutes. Place steak on a heat safe cutting board to rest and cool for about 5 minutes. Then slice and dice the meat into small pieces, about the size of the tip of your pinky.

Taco Toppings:

  • Chopped white onion or scallion
  • Sliced avocado
  • Fresh Squeezed lime juice
  • white cojita cheese or Mexican queso/crumbling cheese
